There is an option to set default permission type, but this option
is on per user basis. So when I set it to "make all my newly
created tasks private", it works the same for all my projects. But
for different projects I need different default options.
There is no problem to change permission when I'm adding a task via
web interface.
But you have such a great instrument - task creation via email. I
just LOVE it - it's a great time saver. With one problem - I can't
assign task to another project manager. My default permission type
is private. So I can actually assign a task to him, but he won't be
able to reassign it.
I see two possible ways out of this.
1. Different default permission types for different projects
2. Add an option to set permission type when creating item via
email.
It would be great if you could do either of them.

We have added support for overriding the default permission when creating an item via email. Please look at the help for creating items via email for more detail.
